Garlic Spinach & Tomatoes

This is a fast and clever way to cook different vegetables in a single skillet. The beans, which need liquid to cook, will blanch in the juices from the tomatoes.

Nonstick cooking spray
1/2 cup chopped tomatoes (Men: 1 cup)
1/4 cup chopped onions (Men: 1/2 cup)
1/3 cup chopped green beans (Men: 2/3 cup)
1 teaspoon minced fresh garlic (Men: 2 teaspoons)
1 cup fresh spinach leaves (Men 2 cups)
Fresh lemon juice
Freshly ground black pepper

Heat a nonstick skillet over medium heat. Spray with nonstick cooking spray. Add the tomatoes and cook for 3 minutes, stirring occasionally. When the tomatoes are soft and juicy, add the onions, green beans, and garlic. Cook for another 4 to 5 minutes, until the vegetables have softened. Add the spinach and cook until wilted, about 30 seconds. Season with lemon juice and black pepper to taste.
